Chicken Biryani Recipe


Ingredients

5 chicken legs
1 tsp salt
3 cloves
1/2 cumin seeds
2 boiled eggs
1/2 garam masala
1/2 lemon
1-2 maice / javetri
5 green chillies paste
1/2 msg / ajinomoto
1/8 cinnamon powder
2 tbl spoons ginger garlic paste
1/8 tsp green cardamom powder
3/4 tsp whole black pepper
1/2 cup friend onions
1/8 cup coriander leaves
1/4 cup of mint leaves
3/4 cup peanut oil
1/2 cup curd
2 cups basmati rice
1/2 cup milk
10 gms saffron

For the Marinade

1) in a bowl add the chicken legs
2) all the above mixtures except rice and water
3) put a lid over this bowl and leave for 15-20 mins

For the Biryani

1) take a vessel and add 2 cups of basmati rice
2) rinse it well with water around 3-4 times
3) add 4 cups of water, leave for 15 mins
4) put it on stove at high flame and add salt and oil
5) just half cook the rice and save 1 cup rice water,
the rest of the water you can drain
6) in a handi add all your chicken marinade that you prepared
7) and above that add the half cooked rice layered, just like
you frost a cake 

 add the boiled eggs and fried onions at the top to garnish
9) add milk mixed with saffron over the top followed by
10) half cup of rice water that you had saved while cooking
the rice
11) cook at high flame for 5 mins and after that low flame
for around 14-15 mins.
12) after it's cooked don't open the lid, wait for around
5 mins, let the steam within the handi do the magic
13) serve hot with mirchi ka salan or curd, enjoy !

Notes

Tip : Do not over cook the rice, or it would become a khichdi not a biryani !
