Ingredients
1 cup porridge rice (boiled in 2 and a half cups of water)
2 green chillies
350 gms curd / yoghurt
1/4 tsp ginger
7-8 curry leaves
7-8 coriander / cilantro
2 tsp vegetable oil
1 tsp salt
1/4 tsp cumin seeds
1/4 tsp mustard seeds
pinch of hing / asafoetida
1/4 tsp yellow lentils
For the Curd Rice :
1) take boiled rice in a bowl
2) add salt
3) add green chillies
4) add curd
5) mix the above mixture
For Tempering :
1) add veg. oil to the kadai
2) temper at low flame
3) add cumin seeds
4) add mustard seeds
5) add yellow lentils
6) add hing
7) add chopped ginger
put off the flame now
9) add curry leaves
10) add this tempering to the curd rice bowl
11) whisk it gently and mix for a few seconds
12) garnish with a few coriander leaves
13) serve chilled, enjoy !
Notes
Tip : use porridge rice for best results, not basmati rice, since basmati rice is high on calories and curd rice makes up as a delicacy to be enjoyed after meals, it has to be made low on calories, hence porridge rice holds good for this recipe !
